Banana Cream Muffins
1 cup unbleached white flour
3/4 cup whole wheat flour (I used white whole wheat)
2 tsp baking powder
1/4 tsp salt
1/3 cup sugar
1 egg
1/2 cup heavy whipping cream
1/4 cup very soft butter
2 ripe bananas
1/2 cup raisins
- Preheat oven 400F, grease standard muffin pan
- In a large bowl, mix together first four dry ingredients
- In a medium bowl, gently beat together next five ingredients
- Stir the wet ingredients into the dry just until combined
- Gently fold in raisins
- Spoon batter evenly into muffin cups
- Bake 20 minutes or until golden brown and cooked through
They sound delicious! I think I'll try them as soon as I have some whipping cream.
