Strawberry Bread

Tonight by dear sweetie's request I whipped up some strawberry bread from a favorite old recipe. I have excellent memories of eating this bread at my friend Maggie's house while listening to stories of trying to keep animals out of their garden. Not to mention my favorite... the competitions to sound most like a cow in order to scare the poor beasts on the other side of the fence.

Here is the original recipe:
Because I seem to be incapable of ever following a recipe exactly, I made a few adjustments.

1. Mix together:
  • 3/4 cup unbleached white flour
  • 1/2 cup whole wheat flour
  • 1/4 cup rolled oats (pounded into bits or processed in food processor)
  • 1 Tbsp Milled Flax
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon


2. Beat in:
  • 2 eggs
  • 3/4 cup canola oil

3. Rinse and chop a good pile of ripe strawberries (eat a few).


4. Pour and Spread into a greased 8x8 pan.

5. Bake at 350 for 1 hour... and then enjoy with coffee tea or milk (try to let cool a little before digging in.
